INGREDIENTS
Pavlova:
- Aquafaba 400mL (liquid from a can of chickpeas)
- Organic Cane Sugar 250g
- Organic Corn Starch 3 tablespoons
- Organic Lemon Juice 1 teaspoon
- Vanilla Extract 1 teaspoon
Whipped Cream:
Optional Toppings:
- Seasonal Berries/Passionfruit Sauce/Mint Tips
PREP METHOD
- Pour the aquafaba into a dry bowl and whip on low speed.
- Add lemon juice and continue to whip till stiff peaks form.
- Gradually add cane sugar, cornstarch, and vanilla to the mixture and keep whipping.
- Spoon the whipped aquafaba mixture into a piping bag with a tip and pipe small circles onto the baking tray.
- Place the tray in the pre-heated oven and bake for 1.5 to 2 hours.
- Once cooled, fill the wells of the pavlovas with coconut whipping cream and your favourite vegan toppings.
